Outside the box mango chutney!

Oven bake mango chutney serve 4 to 6 medium size portions
Ingredients:
1 to 1 1/2 cups mango cut into small cubes
1 regular onion or spring onion (chopped)
1 organic medium red chili chopped
1 to 1 1/2 tsp garlic (grated, minced)
1 to 1 1/2 tsp ginger (grated, minced)
1/4 cup raisins or currants or at mix of the two
1 to 2 tbsp of dry cranberry (Optional)
1 to 2 cardamom pods (crushed and ground)
1/2 to 1 tsp ground turmeric
1/2 to 1 tsp ground cloves
1/2 to 1 tsp ground cinnamon
1 tsp cayenne pepper
2 to 4 tbsp clarify butter (ghee) Or
2 to 4 tbsp organic unsweetened apple sousa
Direction:
Combine all the ingredients.
Pour into a buttered 1 to 1 1/2 quart casserole dish with cover.
Bake at 280°to 300° for 30 to 40 minutes, until hot and soft-browned.
Can be serve with whatever you choose to.
