Vegetable soup with quinoa

Ingredients:
1/2 cup carrot (scraped and chopped)
1/2 Cauliflower or broccoli (chopped)
1/2 cup quinoa washed
1 tbsp butter
1 tbsp ginger chopped
2 tsp garlic chopped
1 cup boneless chicken legs, thigh or breast
1/2 cup cooking onion chopped
1 tsp cayenne pepper
Salt as needed
4 to 6 cup of hot water
2 tbsp coriander leaf finely chopped
1 tsp fresh oregano finely chopped
Direction
Heat butter in a pan.
Add ginger, garlic, chicken saute for 4 minutes, then add the vegetables, onion, quinoa, salt, coriander, oregano, and cayenne, saute all together for 5 minutes then add the hot water; bring to boil for 5 minutes, reduce the hit and let it shimmer for another 15 minutes, or until the vegetables are tender cooked.
Before serving the soup add some fresh herbs of your choice like green onions, coriander, parley finally chopped to your bowl, or anything that you like
Serve hot or warm and enjoy.
